Lemon Garlic Roast Chicken

Ingredients

  • 1 wholechicken (~4 lb)
  • 2 wholelemons
  • 6 clovesgarlic
  • 3 sprigsrosemary
  • 3 tbspolive oil
  • 1 tspsea salt
  • 1 tspblack pepper

Instructions

    Preheat oven to 425°F. Pat the chicken dry inside and out.

    Rub with olive oil, salt, pepper and the zest of one lemon.

    Stuff the cavity with halved lemons, smashed garlic and rosemary.

    Roast 65–75 minutes until the thigh reaches 165°F and the skin is deep golden.

    Rest 10 minutes before carving and spoon over the pan juices.

Cook's tip

Spatchcock the bird and cut roasting time to 45 minutes for crispier skin.
