
Cauliflower Fried Rice with Tahini Drizzle

Ingredients

- 2 wholeeggs
- 1 cupfrozen peas and carrots
- 3 clovesgarlic
- 1 tbspginger
- 3 tbsptamari
- 2 tbspsesame oil
- 3 stalksgreen onion
- 3 tbsptahini
Instructions

Pulse cauliflower in a food processor into rice-sized pieces.

Heat sesame oil in a large skillet and scramble the eggs; set aside.

Sauté garlic and ginger, then add cauliflower and frozen vegetables.

Cook 5 minutes until tender, stir in eggs and tamari, finish with green onion.

Whisk tahini with a squeeze of lemon and warm water; drizzle over the finished dish.
Cook's tip
Squeeze excess moisture out of riced cauliflower for the best texture.
