Ingredients
- 2 largesweet potatoes
- 1 canblack beans
- 1 tspsmoked paprika
- 1 tspcumin
- 2 tbspolive oil
- 8 smallcorn tortillas
- 1 wholeavocado
- 1 wholelime
- 1/4 cupcilantro
Instructions

Dice sweet potatoes; toss with oil, paprika, cumin, salt.

Roast at 425°F for 22 minutes until caramelized.

Warm beans with a pinch of salt and a splash of water.

Mash avocado with lime juice and a pinch of salt.

Fill tortillas with sweet potato, beans, avocado crema and cilantro.

Char tortillas directly over a gas flame for 10 seconds per side.
