
Greek Yogurt Chicken Salad with Harissa
Creamy without the mayo: shredded chicken, grapes, celery, almonds and Greek yogurt. A spoonful of harissa adds smoky North-African heat.
Ingredients
- 3 cupscooked chicken
- 1 cupgrapes
- 2 stalkscelery
- 1/3 cupalmonds
- 3/4 cupGreek yogurt
- 1 tbspDijon mustard
- 1 tbsplemon juice
- 2 tbspparsley
- 2 tbspharissa
Instructions

Shred chicken and place in a large bowl.

Halve the grapes and finely dice the celery.

Whisk yogurt with mustard, lemon juice, salt and pepper.

Fold everything together with parsley and toasted almonds.

Chill 20 minutes before serving.

Stir 2 tablespoons of harissa into the sauce or vegetables before serving.
Cook's tip
Use rotisserie chicken to put this together in 10 minutes flat.
