
Coconut Curry Lentil Soup with Harissa
A 30-minute, freezer-friendly red lentil soup with coconut milk, ginger and warm curry spice. A spoonful of harissa adds smoky North-African heat.
Ingredients
- 1.5 cupsred lentils
- 1 cancoconut milk
- 1 onionyellow onion
- 3 clovesgarlic
- 1 tbspginger
- 2 tbspcurry powder
- 1 candiced tomatoes
- 4 cupsvegetable broth
- 3 cupsbaby spinach
- 2 tbspharissa
Instructions

Sauté onion in a soup pot until soft, 5 minutes.

Add garlic, ginger and curry powder; bloom 1 minute.

Pour in lentils, tomatoes, broth and coconut milk.

Simmer 20 minutes until lentils are tender.

Stir in spinach until wilted, season with lime and salt.
